tonight is taco night.  seasoned black beans, homemade salsa, guacamole, chopped lettuce and tomatoes.  would there even be room for meat anyway?  sounds so good.  i have eaten so many fiber-packed foods this week, that i feel like if there was a strong wind, it would carry me away like a helium balloon.  yesterday i heard that if you eat oatmeal every morning, it literally sucks the cholesterol right out of you!  i believe it.  it’s some powerful stuff.  don’t waste your time eating the instant, though.  i make a cup of steel cut oats with 4 cups water, and it makes enough for days.  it reheats very well.  why didn’t anyone ever tell us that?  oh yeah, because they wanted us to think that the instant oatmeal was the only way to go.

i even am trying coconut milk in my coffee this morning.  it’s not the canned stuff ~ it’s an organic non-dairy thing in a box.  i think the brand is “so delicious”.  it tastes EXACTLY like milk, lasts 7-10 days in the fridge, and costs about the same as milk.  might be worth switching!

it is incredibly beautiful out there today.  if i take a walk, i will be late for my doctor’s appointment, or be on time with bad hair.  but just looking out the window makes me know it’s worth it.  we’ve had such a hot summer here in missouri.  i’m embarrassed to admit that it really affected my mood more than i thought weather ever could.  so glad fall is here!!!

  1. Wow. Thanks for the tip about reheating the steel-cut. I’ve been cooking old fashioned oats in the microwave with my skim milk, but I’ve been wanting to give the steel-cut a try. It seems so Irish for probably no good reason whatsoever!

  2. hi sharoni! it TASTES more irish!!! it tastes hearty and filling and, somehow, emotionally strengthening!
    in the last few minutes of cooking, i add my dried fruit so they get all plumped up. divine…
