take roma tomatoes and slice them lengthwise. top with the following bread crumb mixture:
bread crumbs, chopped fresh basil, oregano, capers, crushed red pepper, a little douse of olive oil, and i think that’s it. add balsamic vinegar if you wanna get crazy.
drizzle a little olive oil on top of each and roast in a 375 oven for 30 minutes.
lidia took these tomatoes out, cut them into quarters and tossed them with pasta and fresh basil. AAAAH! why are italians such geniuses!

slice big tomatoes, zucchini, fresh mozzarella, and stack, with a fresh basil leave in between each one. top with bread crumbs and bake? little mini stacked veggie lasagnas?
