oatmeal breakfast bars.

i’ve been wanting to create a breakfast bar that can be pulled from the freezer and thrown in my bag.  i usually forget to eat breakfast until i get in the car, and wanted a foolproof way to get my fiber and oatmeal in.

and here it is!

here’s the recipe:

blend the following…

2 T butter and 1/4 coconut oil, melted together

1/2 cup honey

1 large egg

1/4 cup almond butter

1/2 teaspoon vanilla

 

in another bowl, whisk together the following:

1/4 cup nonfat dry milk

1 cup flour:  use white flour, whole wheat flour, or gluten-free flour!  (i mix my own gluten-free flour, and for cookies, add one teaspoon of xanthan gum to the mix.)

1/2 teaspoon baking soda

1/4 teaspoon salt

1 3/4 rolled oats (gluten-free oats if you’re going there…)

1 T flax seed

1/2 teaspoon cinnamon

1/2 cup sliced almonds

add mixture to wet ingredients.

toss in dried cherries or dark chocolate (if you need sweet in the morning) or more nuts, or chopped apple!  my next batch will have chopped pineapple in it for sure.

flatten in an 8×8 pan that’s been sprayed.

bake for 20 minutes at 350.

they were so good straight out of the oven, but this morning is the real test.  i froze them in packages of two yesterday, and this morning, sent a package with the hub.  hope the gluten-free flour can withstand the freezer!
