as i write this, i am watching the special report on the attacks at the boston marathon. i am so frightened and so sad that we are back here, at this state of fear. my heart is so heavy that i literally MUST write stupid stuff about food and recipes, and simply distract myself. i’m just so disgusted and horrified that this world is such a mess.
not sure this meal from the other night is really so amazing that i need to post the recipes. but what i would like to post is the FORMULA.
make meatballs with virtually anything in them. any ethnicity of flavor will do.
brown them up in a pan with some olive oil and put them in a baking dish.
make a sauce and pour it over the whole thing and stick it in the oven.
bake until the sauce looks caramelized on the top of the meatballs.
if you’re stuck on what option to try, here are some ideas:
meatloaf flavored meatballs
asian or teriyaki (that’s what i made. they were pretty yummy)
italian
mexican (cilantro, cumin, chili powder, etc) with a mole tomato sauce over the top!
tuna or salmon balls? just thinking outside the box.
it’s hard to care about meatballs, when marathon runners’ have lost limbs and lives right now. here we go again.
