homemade granola/trail mix.

have i posted this recipe already?  i’ve made it a few times this summer and it continues to be a hit.

this is so good as a cereal with milk, or as a healthy snack.  i started with gwyneth paltrow’s granola recipe, and have varied it each time…

HOMEMADE GRANOLA

2 CUPS OATS (NOT INSTANT, NOT STEEL CUT)

1 CUP OF NUTS (WHOLE OR SLICED ALMONDS, PUMPKIN SEEDS, SUNFLOWER SEEDS, WHATEVER YOU LIKE)

1/2 TEASPOON CINNAMON

1/4 TEASPOON SALT

1 TEASPOON VANILLA

1/2 CUP REAL VERMONT MAPLE SYRUP

3 TABLESPOONS AGAVE NECTAR (OR BROWN SUGAR, IF YOU DON’T HAVE AGAVE NECTAR)

2 TABLESPOONS VEG OIL (I USE SMART BALANCE OR COCONUT OIL)

COMBINE AND THROW ON A SHEET PAN WITH PARCHMENT PAPER THAT’S BEEN SPRAYED.

BAKE AT 350 FOR 15-20 MINUTES.  

LET COOL, THEN BREAK APART AND TOSS WITH DRIED FRUIT.  

THIS LAST TIME, I USED DRIED CHERRIES, WHICH I THINK ARE THE BEST SWEET THINGS ON THE PLANET.  I’D LIKE TO MAKE MY NEXT BATCH WITH SHREDDED COCONUT AND CHOCOLATE CHIPS.  OR WHAT ABOUT USING COCOA POWDER IN THE MIX?  CHOCOLATE GRANOLA?  

YES, PLEASE.

  1. OMG, I just made this for the 2nd time and this time I’m making 2 batches. LOVE LOVE LOVE!!!
    dried cherries…dried pineapple and some dried peaches this time with cocoa powder and flax seed added in the wet mix. I’m so excited!
