bok choy soup.

i hear bok choy is extremely healthy.  so i made this quick soup…

BOK CHOY SOUP

chop up some garlic and throw it in a pan with some olive oil.

add some chopped celery with the leaves, chopped ginger, and the chopped bok choy.

after things get to know each other…

add a small dollop of better than bouillon veggie broth, or miso paste, and soy sauce.

add a couple cups of water and get it simmering.

top with chopped fresh cilantro.

this is all i had, but if i had carrots, i’d add those.  or any of those cool asia veggies, like baby corn.

i just can’t believe how much this tastes like a soup from a chinese restaurant.   very flavorful.  i think it’s the

ginger ~ if you haven’t yet, go out and buy some ginger, cut it up in one inch chunks, peel the skin off (or cut it off), put it all in a baggie and toss it in the freezer.  you will use it so much, when you find out how much you can use it.  it’s so healthy and so easy!
