south of the border salad ~ with a special guest.


i think i found the answer to a truly satisfying, delicious salad.


not very many ~ just a few tiny ones in there with some onions and a bean of your choice, sauteed in a pan.  mix it up with your cold ingredients and and pour on the dressing.  SO GOOD.

here’s the recipe i just made:


hot stuff: add some chopped onion, potato and chick peas or black beans to a pan with some olive oil, salt and chili powder.  sautee until potatoes are done. 

cold stuff: lettuce, chopped mango, chopped avocado, chopped cucumber, chopped tomatoes, whatever you like, or whatever you have.

dressing: olive oil, juice of a lime or two, dijon mustard, honey, salt and pepper, and cilantro.  blend and pour over it all.

i topped this salad with some corn tortillas i brushed with coconut oil, a little salt and chili powder, and baked in a 400 degree oven for 5-7 minutes.

if you’re trying to go meatless, this really is a hit.  the hub has to have meat on his salad, but he was okay with this, because of those awesome potatoes.
