breakfast amaranth.

has anyone tried amaranth yet?  i’ve there’s been a lot of talk about the benefits of this grain, and i had been meaning to pick some up at the grocery store for months.  well, i finally did it, and am eating it for breakfast right now!

it is DELICIOUS.  well, what’s not delicious when you cook it in coconut oil, vanilla, cinnamon and maple syrup?

i just went back for seconds.

the consistency is kind of crunchy and gel-like.  that sounds gross.  but it’s not.  it’s so addictive!

okay, here’s how i made it this morning:

BREAKFAST AMARANTH

  • 1/2 cup amaranth
  • 1 cup water
  • 1 teaspoon coconut oil
  • cinnamon (to taste)
  • pinch of salt
  • bring to a boil, then cover and reduce to the lowest simmer, cooking for about 20 minutes.  watch it in the last few minutes and make sure it doesn’t burn or stick to the bottom of the pot.
  • take off the heat and add toppings:
  • vanilla
  • maple syrup
  • brown sugar
  • dried fruit
  • sliced almonds
  • chopped bananas or apples

…or anything else you like for breakfast!  this morning, i just had a little maple syrup and a drop of this amazing mexican vanilla my supplier, i mean mother, picks up for me when she vacations south of the boarder.  (thanks, mom!!!)

so, i hear this amaranth stuff lowers cholesterol even faster than oatmeal.  and since i went back for seconds, and have never done that with oatmeal, i think this will be a keeper in my kitchen.
