okay okay, at some point, i will stop talking about this breakfast i had in florence a few months ago. with the cucumbers, tomatoes and ricotta cheese. but i just have to post it one more time! i ate it this morning while i was making my first poached eggs, and it was so fantastic.
this is just ricotta cheese, with salt and fresh cracked black pepper, and some fresh dill on top. sliced cucumbers (the kind that are wrapped in plastic wrap ~ i think they’re called hothouse cucumbers. or burpless), and halved grape tomatoes. it’s such a great way to start the day!
i poached my first egg! and it was so easy. a poached egg is basically a soft-boiled egg, only you crack the egg into the water first. here’s how you do it:
- bring a couple inches of water to boil. then turn it down until the water is just simmering. add a couple teaspoons of a good tasting vinegar, like seasoned rice vinegar, or champagne vinegar.
- crack the eggs, one at a time, into a little bowl or cup and slide each egg slowly into the water, without letting it plop. if the whites start to wiggle away from the yolk, just use a spoon to bring it all back together. no biggie.
- take the pan off the heat and let sit for a few minutes. i let mine sit for 4 and the yolks were done on the outside, but a little jelly-like on the inside. i really like it that way, but i’ll try to get it a little runnier next time.
- top with salt and pepper, and fresh dill. here’s a pic!
isn’t it beautiful? i ate it with a little stone-ground mustard. very good! but next time i’ll make hollandaise sauce ~ i have the BEST recipe for hollandaise. it’s made with half olive oil ~ half butter. it’s amazing. i’ll post that later.
i hope you are inspired to try new things for breakfast. i don’t necessarily think breakfast is the most important meal of the day, but i do think that we can get off to a bad start with the choices we make at breakfast. these breakfast ideas are so fresh and light, but keep you full for hours. i hope you try them!!!!
