this recipe is called higos rellenos in spanish ~ such a beautiful language with such beautiful culinary delights.
and there’s a caramel sauce too. WOAH. heaven.
directions use fresh or dried figs (i prefer dried) ~ cut figs in half and press a little blue cheese into each half. press a pecan half on top of the cheese. wrap each fig with a thin slice of prosciutto, or just lay a piece of pastrami or crispy bacon on top. or leave the meat off. the fig and blue cheese are the real stars of this show. place on a sheet pan and broil for just a minute or two. serve immediately with this insanely delicious and easy caramel sauce!
caramel sauce cut 1/2 cup butter into small pieces and melt in a saucepan. stir in 1/2 cup brown sugar and 1/4 cup heavy cream. cook over low heat, whisking until everything is melted and blended, about 2 minutes. stir in 1/4 cup sherry. serve warm.
just pre-make the figs and pop them in the oven the second your guests arrive. you can also pre-make the sauce and leave it on the stove top on low.
