love, love, LOVE this salsa. i’ve probably already posted this recipe, but i wanted to post it again as a key component to an AMAZING soup that i will share with you very soon. but this salsa is so good on its own, of course.
salsa verde (or tomatillo salsa) preheat oven to 400.
place the following on a sheet pan: 10 or 12 tomatillos, a white onion quartered, one poblano pepper left whole, and 3 cloves garlic. toss with a little olive oil and sprinkle with salt and pepper. pop in the oven for 20 minutes.

(that red pepper is for another salsa ~ the pico de gallo i also made that day!)
while that’s roasting, dice up some fresh radishes and fresh cilantro.
after the roasting goodies are done, let cool a few minutes. cut the stem and seeds away from the poblano pepper.
throw it all into a blender and add the cilantro, some lime juice, and more salt and pepper if needed.
garnish with radishes.
et voila!
i love the subtle colors, but the not-so-subtle flavors!
