a total, absolute hit.

the original recipe is BERRIES with caramelized cream.  so i made that the first time.  the second time, i decided to make it a little more autumnal with fried apples.  also amazing.  i loved both equally ~ and i especially loved the fact that it had NO SUGAR.

the recipe calls for stevia, which is a product i really wasn’t interested in at all, until i tried this dish.  i think it’s worth having in your pantry, if only just for recipes like this one.

can you just imagine a “peaches and cream” version of this one?

this is a recipe from I QUIT SUGAR, by sarah wilson.  this is my go-to book if i need a dessert or treat, but don’t want to eat sugar.  i highly recommend the book.

fruit with caramelized cream

  • Servings: 4-6
  • Difficulty: ”easy”

ingredients:

  • any kind of fruit: mixed berries, apples, peaches, whatever you like!
  • 9 ounces mascarpone
  • 2 tablespoons sour cream
  • 2 tablespoons heavy cream
  • 1 large egg, plus 1 egg white
  • 3 tablespoons granulated stevia
  • seeds from 1 vanilla bean (or 1 tablespoon good vanilla)
  • pinch of salt

directions:

  1. preheat your broiler and put the oven rack in the middle or lower half of the oven.
  2. whisk together all the ingredients except for the fruit.
  3. divide the fruit among individual ramekins, one for each guest. (if you use apples or peaches, cook them first in a pan with some butter, so they soften a bit)
  4. put the ramekins on a sheet pan and pop under the broiler for 5-10 minutes, until the top is just browned and caramelized. serve immediately!!!

variations: the traditional recipe ~ mixed berries, strawberry/rhubarb, peaches with almond flavoring, apples with lots of cinnamon, pineapple, cherries, soft pears, even mango!  you can also soak your fruit in some kind of dessert liquor to class it up!
