chia pudding. (dairy free)

have you tried this stuff?  i had no idea it would be this good, or this filling.  i had 1/2 cup, or less than that really, at 7:00 this morning, and three hours later i was still going strong! and that’s after a rigorous training session at the gym!

i’m so glad i tried it.

i don’t know how appealing this actually looks.  think “tapioca”, not “science experiment”.

so here’s the recipe.  it’s nothing special ~ you can find this anywhere on the inter-webs.  but i thought i’d post it here for your convenience.

feel free to get creative and personalize it any way you like!

chia pudding

  • Difficulty: easy
  • Print

place the following ingredients into a glass mason jar

  • ⅓ cup chia seeds
  • 1 cup almond milk, or hemp milk or soy milk (i love almond/coconut milk)
  • 1 teaspoon (or more) vanilla
  • as much cinnamon as you want!
  • a couple dates, minced finely
  • one package stevia

shake well and refrigerate overnight.  in the morning, you have a gorgeous pudding that is packed with nutrients!

extras to add if you want:

  • a fresh mango, diced
  • unsweetened coconut flakes
  • blueberries (those tiny little wild blueberries would be amazing)
  • anything that tickles your fancy!

i’m no calorie-counting expert, but my fitbit dashboard says my helping of chia pudding this morning was 208 calories!  i can’t wait to add blueberries tomorrow!

  1. One of my sweet friends at the office made this for me for breakfast on morning and put it in a beautiful parfait glass with two raspberries on top. What a wonderful treat! I seriously need to make this for myself!

    1. i just love the fact that you can wake up and there’s breakfast in the fridge. ideally, it would be hot. but i’ll take this any day!
