homemade salad dressings are my favorite thing in the whole world. they can make a bowl of boring, raw veggies taste rich and decadent. and if you do them right, they just add more health to the dish.
i made this multi-purpose dressing for a dinner party a while back, and it was so yummy. it lasts forever in the fridge, and can be used as a sauce for pasta, or slathered on grilled chicken or shrimp. it’s kind of thick, but all you have to do is add a little hot water to make it more “dressingy”.

throw the following ingredients into a blender and blend until smooth and creamy.sun-dried tomato vinaigrette
the hardest thing about making this dressing is getting out all the stuff, and putting it all back when you’re done. the actual making of the dressing is too easy for words. and it lasts forever in the fridge.
i just thought of another delicious way to use this dressing! sun-dried tomato deviled eggs!! oh yeah!! and i even have a couple boiled eggs in my fridge right now. woot woot!
