sun-dried tomato vinaigrette.

homemade salad dressings are my favorite thing in the whole world.  they can make a bowl of boring, raw veggies taste rich and decadent.  and if you do them right, they just add more health to the dish.

i made this multi-purpose dressing for a dinner party a while back, and it was so yummy.  it lasts forever in the fridge, and can be used as a sauce for pasta, or slathered on grilled chicken or shrimp.  it’s kind of thick, but all you have to do is add a little hot water to make it more “dressingy”.

see?  it looks like marinara sauce.  but it’s tangy like a dressing.

i just love that little jar ~ it looks like something from a chemistry lab.

here’s the recipe!

sun-dried tomato vinaigrette

  • Difficulty: ”easy”

throw the following ingredients into a blender and blend until smooth and creamy.

  • 2-3 cloves garlic
  • one bag of sun-dried tomatoes (softened for a few minutes in a bowl of boiling water and drained) ~ i prefer the bag over the jar kind.
  • a big handful of basil (as much as you can get your hands on!)
  • a big handful of fresh spinach (cuz why not?)
  • ¼ cup fresh grated parmesan (adjust to taste)
  • ¼ cup red wine vinegar
  • ½ cup extra virgin olive oil
  • dried oregano, fresh cracked black pepper, and kosher salt, all to taste
  • if it’s too thick, add a little hot water.

the hardest thing about making this dressing is getting out all the stuff, and putting it all back when you’re done.  the actual making of the dressing is too easy for words.  and it lasts forever in the fridge.

i just thought of another delicious way to use this dressing!  sun-dried tomato deviled eggs!!  oh yeah!!  and i even have a couple boiled eggs in my fridge right now.  woot woot!
