such healthy, hearty, morsels of goodness.
this is a bowl of chopped veggies, tossed in the following:
- stone ground mustard
- chopped garlic
- maple syrup
- balsamic vinegar (optional)
- olive oil
- salt and pepper (or other seasonings)
i added AIDELL’S chicken sausage, chopped and tossed in with all the veggies.
spread on two sheet pans lined with parchment paper, and roast in a 400 degree oven for 45 minutes.
i like to have some veggies that are completely blackened on one side ~ it’s like candy or french fries or something. but if you don’t like that, just flip your veggies and don’t roast as long.
the veggies i used this time around (veggies i found in my fridge that needed to be used, or else they would expire):
- potatoes
- sweet potatoes
- sweet onions
- zucchini (slice these larger so they don’t get too mushy)
- fennel
- brussels sprouts (stems removed and halved)
and maybe other veggies but i can’t remember. you can’t go wrong, y’all! you can’t! carrots, turnips, radishes ~ try anything hearty!!
and don’t forget to toss them in that amazing sauce.
this is company-worthy food…
