absolutely divine.
i drank it like it was a glass of milk right after i made it.
and i hated milk as a kid, so i’ve never really enjoyed anything like this. it’s so creamy and comforting. i get it now, milk drinkers. i get it.
here’s how you do it:
- in a mason jar, cover a cup of almonds with 2 cups of water. put the lid on and let it sit for 24 hours.
- the next day, drain and rinse the almonds, and put them in a blender with 6 cups fresh water, a pinch of salt, 2-3 dates (pitted!) and 1-2 teaspoons vanilla.
- blend for 90 seconds, then slowly pour into a nut bag and squeeze into a large bowl. or you can use a clean, white kitchen towel as a strainer. it works great. wring and squeeze the towel, until all the liquid is in the bowl. discard the leftovers.
- pour the milk into a pretty little jar with a lid and pop it in the fridge. use almost any way you would use regular milk, but reap all the amazing benefits of raw almonds!
