salads don’t have to have lettuce in them.
here’s the evidence…
who needs boring lettuce?
you can make a yummy salad like this, and put it in the fridge, dressed and all, and it will just get better and better over the next few days.
it’s such a healthy and quick snack.
and you can toss this salad with kale or some kind of leafy green lettuce, and just like that, you’ve got a great salad for your family. or leave it without the lettuce to pack a real punch.

here’s what i put in this particular mix: roasted chick peas and buckwheat groats (both already prepared and just hanging out in the fridge), steamed broccoli, pickled red onion, cucumbers, tomatoes, avocado (added just before serving), and topped with toasted sesame seeds.
here’s the dressing: 1 garlic clove, a scoop of stone ground mustard, a teaspoon of honey or orange marmalade or something sweet, some juice from the pickled onions, juice of 1 lime, 1 tablespoon olive oil, and salt and pepper. whisk together and toss with all the yummy veggies and let them marinate and get all sexy in the fridge!
i added tuna for a filling lunch…
that’s it! and today, that salad is waiting for me in the fridge, even more flavorful than it was yesterday…

Sounds and LOOKS so yummie! So ~ did you make the pickled red onion? Or did you purchase them somewhere? Inquiring minds want to know. 🙂 Is a scoop of stone ground mustard about a tablespoon? Thanks in advance!
Hello! Yes and yes. I use a tablespoon of mustard, but you can do more or less based on your preferences. And the pickled red onions are chopped and stored in a mixture of your favorite vinegar and ice water ~ about 1/2 and 1/2. Maybe some salt too. It stores in the fridge for a week and just gets sweeter and more yummy over time. And use that juice! It’s divine!
