DAY 1:

Happy Day 1 of the 21-day Reset!  How is everyone?

I’m feeling really great.  A little overwhelmed, but great.  It’s hard to focus on anything else when you have so much produce in your fridge.  I have a LOT of prep to do, but if I get the bulk of it done today, it’ll be smooth sailing this next week.

It’s 4:21PM, and we had lunch at almost 3:00 today.  And breakfast at 10:00.  So that’s gotta stop.  It’s still winter break for us, until tomorrow.

Every day, I hope to tell you the meal plan in Pixy’s Kitchen, and what non-food distractions I partake in.  I think it’s important to dive into projects and things that make you happy, in general.

Shouldn’t that be every day, though?

JOURNAL ~ JANUARY 2, 2019

We are still in Winter Break mode, so we woke up late, and didn’t go to the gym.  But the exercise part of all this will start tomorrow, for sure.  I’m feeling sore and achey from lack of movement.

BREAKFAST:  The hub made scrambled eggs with hot sauce and chopped celery.  His specialty, and SOOOO GOOD.  He also insisted we buy some really nice bacon at Sprouts, and I believe it’s sulfite-free, which the Whole 30 says to use, if you absolutely HAVE to have bacon.  And since this is the last day of the hub’s winter break, it had to happen.

Black coffee.  My fave.

LUNCH:  Mole Stuffed Peppers and Tomatoes, with fresh salsa and avocado crema.  I’m not gonna lie, I knocked this one out of the park.  This was insanely good.  Here’s the link to the recipe: https://pixyskansascity.com/2019/01/02/mole-stuffed-peppers-and-tomatoes/

Tonight, we’ll have a salad for dinner, and shut down the eating early.  Trying to eat light in the evening, and not eat after 8:00PM.

I know that I eat from boredom, so my focus today is this blog.  I have a lot of business to take care of, and a lot of cleaning to do around the house, but I’m really focused on the blog and enjoying every minute creating these meals and communicating with you!

Finally, everyone on social media seems to be obsessed with created a word for 2019.  Do you have one?

Mine might not be the deepest thought I’ve ever had, but this year, my word is COLOR.  I wear a lot of black, and my house is more neutral than I’d like it to be.  I want to embrace colors more this year, and really wake up and live brightly.

That’s my two-cents’ worth!
