WHOLE 30 ROCKS!!! Well, it rocks when you figure out that you need something to look forward to every single day. If it’s food ~ and it can be food that’s on-plan ~ you have a winner!
It was Saturday Night and we needed a treat. We didn’t eat past 8PM, we didn’t go out, we watched a dumb movie at home and stayed on the dang plan.
But at about 7:30, I was feeling like we needed a treat. So I whipped these little beauties up.
They taste like an almond joy truffle!
The original recipe that inspired me is called an Almond Joy Lara Bar ~ I found it at http://www.40aprons.com ~ really great stuff on there. But I changed this one up quite a bit to fit my taste, and also to fit the ingredients I already had.
Here’s what I did:
ALMOND JOY TRUFFLES
Dump the following ingredients into a food processor:
- 1 cup raw almonds (pulse those first, by themselves, until crumbly)
- 1/2 cup dates
- 1/2 cup dried cherries
- 1 cup coconut flakes, plus 1/2 cup for coating
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon cinnamon, opt.
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil, melted
Blitz until it all comes together.
It might need a little warm water to make the mixture sticky enough to roll. Do what you need to do.
Take a small ice cream scoop and drop them into a bowl of the extra coconut flakes, and roll to coat.
Refrigerate, or eat some right then and there. TRY not to eat all of them at once.
You can tweak these! Orange zest, lime zest, add coconut milk if you want something creamier, or different types of dried fruit. Leave out the cocoa and do something more like Kitchen Sink cookies, or granola!

I cannot wait to make these again, and change up the flavors.
