You don’t need this recipe. It’s so easy. I just wanted to put a little bug in your ear, just in case you have forgotten how easy a pork chop can be.

Honestly, I didn’t think I liked pork chops until the Hub came home one night a few months ago, with some bone-in pork chops from Trader Joe’s. Two in a package. Makes it so easy to pull one of these out of the freezer, defrost, and drop in a marinade.

The Hub’s grilled version was so delicious, but here’s an “indoor” variation…

Marinade: freshly grated ginger, soy sauce, coconut oil (melted), and salt and pepper.

Allow to marinate in the fridge for at least 30 minutes.

Sear on a hot grill pan until you get a gorgeous color on both sides.

Transfer pork chops to a large baking dish and finish cooking under the broiler for just a few minutes.

See? Too easy!!
