What’s your “new normal” now?

Hate that phrase as much as I do?

My new normal is not so new to me ~ it’s called “make salads great again”.

Ugh ~ I hate myself right now. Enough with the stupid catch phrases.

Here’s a salad recipe that will make you feel okay about eating yet another salad for lunch. You can also serve this at your next non-existent, imaginary dinner party.

HARVEST SALAD.

Ingredients
  

in an oven preheated to 400 degrees, roast the following veggies on top of 4 slices of thick-cut bacon…

  • 1 delicata squash seeds removed and sliced (no peeling necessary)
  • 1 zucchini quartered and sliced
  • 1/2 red pepper sliced

meanwhile, whisk together your vinaigrette in the bottom of the salad bowl…

  • 1 tbsp stone ground mustard
  • 1 tbsp real maple syrup
  • 1-2 tbsp rice wine vinegar or any kind of vinegar
  • 2 tbsp apple cider
  • 2 tbsp olive oil
  • salt and pepper to taste

then chop and drop the raw ingredients into the bowl…

  • spinach
  • feta cheese
  • dried cranberries
  • pepitas raw or candied
  • 1 apple diced

take the veggies out of the oven and let the bacon bake until crispy.

    chop up the crispy bacon and toss it all together just before serving.
