Keto Stir Fry.

WAIT! Don’t leave just because I used the word KETO! This is such a great way to get your veggies in, no matter what religion you worship ~ vegan, vegetarian, paleo, keto, or cookie monster!

I am quite ecumenical ~ I’m a lover and believer in all of those disciplines. Whatever makes you feel amazing. But this month, I’m doing a 30-day keto reset and I feel fantastic. I’ve lost 5 pounds, and I have NEVER, EVER lost 5 pounds ever in the history of me. Ever.

Anywho, here’s this lovely stir-fried vehicle for veggies!

KETO STIR FRY.

Ingredients
  

preparing for a stir fry means cutting everything up and having it ready. then, when the wok or frying pan is nice and hot, you can stand at the stove with your martini, and just enjoy yourself!

  • shrimp defrosted in cold water, and cut into large chunks
  • 3 green onions chopped, white and green parts kept separate
  • 2 cloves garlic smashed
  • 1 carrot chopped
  • 1/2 head cauliflower blitzed in a food processor
  • 1-2 bunches raw spinach blitzed separately in a food processor
  • cilantro blitzed with the spinach
  • 1-2 tbsp coconut aminos or soy sauce
  • 1 tbsp coconut oil
  • salt and pepper to taste

everything ready to go? yay! start with the shrimp, cooking it quickly in coconut oil. remove shrimp from the pan.

    now for the veggies: cook the white parts of the green onions first, and let them soften and get sweeter. then add the garlic and carrots, then the riced cauliflower. allow them to all get to know each other.

      season with coconut aminos and salt and pepper, to taste. you can add more seasonings, but this is the most basic.

        add in the spinach/cilantro mixture and the green parts of the green onions and cook for another 30 seconds or less.

          drop in the shrimp, or serve on top of the rice. your choice!

            As you can imagine, this is brilliant for cleaning out the fridge and adding forgotten vegetables near extinction.

            Also, it’s a GREAT way to get in your spinach!
