I don’t know why I’m not eating this salad every single day.
It’s so easy to put together, and really packs a healthy punch. And my goodness, it’s satisfying.
First, remember that salads like this are so great for cleaning that fridge of yours. So pull out your jarred olives, pickles, forgotten veggies ~ you name it ~ and throw it all in.
And I LOVE this dressing! It’s equal parts of 3 ingredients: mustard, vinegar or lemon juice, and oil. DONE. So easy.
Easy Spinach Salad
Ingredients
- fresh spinach
- artichoke hearts
- kalamata olives
- tomatoes
- canned tuna
- red peruvian pickled peppers
- shredded parmesan cheese
- fresh basil
- avocado oil
- dijon mustard
- balsamic vinegar
Instructions
- In the bottom of a large bowl, add equal parts mustard, balsamic vinegar, and avocado oil. I used 1 tablespoon each for a salad just for me. Whisk together and add salt and pepper and fresh basil.
- On top of the dressing, start dumping in all the other ingredients. Drain the tuna, and give everything a rough chop, including the spinach.
- Toss when it's time to eat!
I’ll never make this salad the same way twice, and you probably won’t either. That’s the fun of it, and it’ll also keep you from getting sick of salads. They can be different every single day.
