Folks, this bread is it. I officially don’t miss bread. And on top of that, I now don’t have to deal with tummy aches, brought on by lovely sandwiches.
Like I said ~ this is it.
I started with a few recipes online, and combined them a bit to make my favorite version. I also hear that you can simply make keto bread with cheese and eggs.
Here’s my version:
keto chaffle sandwich bread
- 6 Tablespoons almond flour (or 1.7 ounces)
- 2 Tablespoons sour cream
- 2 eggs
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon water
- 1 Tablespoon shredded cheese, parm, or melted cream cheese optional
- mix all ingredients together and pour a little less than 1/4 cup into a mini waffle maker, sprayed with oil. makes 4-5.
That is a Keto BLT, y’all.
Well, it’s actually bacon, spinach, tomato, and my own version of mayo, since I loathe and despise mayo. It’s just sour cream, cream cheese, and a bit of ranch seasoning.
And don’t forget to bake that bacon in the oven! It’s so much better that way, and your whole house won’t smell like fried bacon for eternity. Not that that’s such a bad thing…
