Healing Chicken Soup.


Start by making the broth. Put the following in a large stock pot and cover with cold water.

  • 1 whole chicken or pieces
  • 2 tbsp black peppercorns
  • 1-2 tbsp kosher salt
  • 1-2 inches fresh ginger sliced
  • 2-3 cloves garlic smashed with a knife

Bring to a boil, then reduce to medium, cover, and let cook for an hour.

    Skim the top layer of fat and sediment off with a large spoon, pull out the chicken and let it cool on a platter, and strain the broth with a fine mesh sieve.

      Return the broth to the (cleaned) stock pot. Now you're ready to make the soup.

        Chop and drop your favorite vegetables. Here are mine!

        • 2-3 large carrots I like large chunks
        • 4-5 stalks celery
        • 2 medium sweet yellow onions or one large
        • salt and pepper to taste

        Cook on medium for about 15 minutes, or until the veggies start to soften a bit.

          Reduce to low and add your shredded chicken.

            Serve with fresh dill, and more cracked pepper on top, if you like!

              Freeze in individual containers for an easy, healthy lunch!
